Mango hindhi

This is another kind of pickle.


  • Sour unripe mangoes - 2
  • Salt - 3 Tbsp
  • Mustard seeds - 2 tsp
  • Asafoetida - a large piece / 1/2 tsp
  • Red chilli powder - 150 gm


  1. Wash the mangoes and dry them thoroughly.
  2. Cut the mangoes into thin slices.
  3. Put the slices in a glass jar with about 3Tbsps of salt.
  4. Keep it outside for 3 days, shaking the jar every morning to mix it up.
  5. After 3 days, add the mustard seeds, asafoetida, red chilli powder and grind to a thick paste, adding as little water as possible.
